When you stop being sweet, make sure you have other foods on hand. Replacement foods are key! You will find yourself voraciously hungry and you will NEED to eat something. Have something to nosh on, something satisfying. I use apples and natural peanut butter. Try red, orange and yellow sliced fresh peppers. Mmmm!
I ate lots of bread when I first quit. While bread is a complex carbohydrate, for me it was still better than a box of cookies. Pasta and bagels also got me through. Eventually I’d reach for those foods instead of cookies and over time I managed to cut back the carbs.
Take things one step at a time.

I really need to write one cohesive narrative about how I quit sugar…
In the beginning all I did was cut out processed sugars. That meant replacing cookies, cakes, and candy with other foods.
At first, my body still craved carbs and I still ate complex carbohydrates like bagels, orange juice, pasta, and bread. Yes, they turn into sugar, but they weren’t boxes of chocolate covered pretzels or pints of ice cream.
Once I got past the initial shock (sweats, intense hunger, etc.) I found it easier reduced the amount of carbs I was taking in. That was at about six to eight weeks.
Today I still eat pasta, a bagel from time to time, and fruit. That’s what works for me.
My point: Don’t expect to quit sugar cold turkey and not be ravenously hungry! And don’t expect to be satisfied by rice cakes and water.

I know, I eat complex carbs too, I just don’t consume ACTUAL SUGAR such as that in BAGELS! What I’m saying is that SUGAR is a main ingredient in BAGELS. Actual sugar.
